This Banana Oatmeal Pancakes recipe satisfies your morning sweet tooth – thank you, ripe bananas – and tames your hunger growl ‘til lunch. With a sprinkle of cinnamon spice and a dash of sweet vanilla, the smell of this hearty stack alone will have you chompin’ at the bit for a bite!

Ingredients

  • 1 ripe banana
  • 1 cup Kodiak Classic Rolled Oats Oatmeal Canister
  • 2 large eggs
  • 1/2 teaspoon cinnamon
  • 1-1/4 teaspoon baking powder
  • Pinch of salt
  • 1 teaspoon vanilla extract
  • 1-1/2 teaspoons maple syrup

Directions

  1. Add all ingredients to a blender and blend until smooth.
  2. Let sit for five minutes to allow oats to soak up the liquid.
  3. Grease a skillet with butter and heat to medium high.
  4. Pour about 1/4 cup of batter onto the skillet. Let cook until golden brown then flip and cook on the other side for 30 seconds. Repeat with remaining batter (makes 7-8 pancakes)
  5. Serve topped with butter, sliced bananas, and maple syrup.
