Joel describes Kodiak Cakes as a "frontier flapjack and waffle mix, made with 100 percent whole grains, honey, egg whites and milk, without all the sugar, shortening and cholesterol that many other mixes have." Though whole grain, the pancakes produced are remarkably "light and fluffy, taste great and have the convenience of just adding water."
The mix has attracted a nationwide following, according to Joel, as people, traveling through the area, buy a box, find they like it, but can't find it in their stores. As a result, special orders flow into the company's Salt Lake City Office.
