Country Carrot Cake

2 1/4 C Kodiak Cakes Flapjack Mix®
2 t cinnamon
1/2 t ground nutmeg
2 C brown sugar
3/4 C oil
4 eggs
3 C grated carrot
1/2 C coarsely chopped pecans

Beat eggs, then mix in sugar.  Add oil and mix.  Mix dry ingredients and gradually add.  Stir in nuts carrots.  Pour into greased and floured 9 x 13 inch pan.  Bake at 350 F for twenty-eight to thirty-five minutes or until toothpick inserted in center comes out clean.

Frost with Cream Cheese Frosting.
